The natural ecosystem in which the vines are grown, above all the “terroir” (microclimate, soil and subsoil) gives the wine its character and quality. The wine’s sugar content, acidity, PH, colour, tannin and bouquet depend on these factors, then oenological techniques are applied to this wine.
