Vinification : The grapes are harvested manually when they reach perfect maturity. After pressing (for 6 hours) the preliminary clarification takes place at cold temperatures. The alcoholic fermentation occurs between 2 - 3 weeks with selected yeasts for the processing of AOP Alsace Pinot Gris VT under controlled temperatures (16-18° C). No malolactic fermentation in order to preserve the acidity of the wine. Then the wine is racked, filtered and filled in bottles.
Soil : The grapes come from wine growers who practice viniculture for years. The vineyards are located at the community in the heart of the Courronne d'Or, the northern part of the Alsatian vineyards. Mostly there is marly and chalky soil.

Sensory characteristic :
Colour: Yellow color, with brilliant reflections.
Nose: Aromatic, present and fruity (candied fruits like apricots) notes, with strong smoked flavours.
Palate: Pleasant. Round and soft attack on the palate, with a great acidity and a long finish. A good balance between sugar and acidity. Aromas of fruits.
Recommendations : Perfect to different desserts, venison with cranberries and pastries.
